I have found it out thanks to my father who studied history. It is the head of a Turk pecked by a raven which is a part of the arms of the House of Schwarzenberg that owned the chateau. It symbolizes the conquest of a Turkish fortress in Hungary known in German as Raab ('Raven'). Member of the House, Adolf von Schwarzenberg, commanded the army in that battel and gained the motive to the arms by the Emperor as thanks. The House also owned Třeboň where is the fountain with the motive. See http://en.wikipedia.org/wiki/HouseofSchwarzenberg.
