The images that are HDR are Tagged HDR. I shoot in RAW and process in Photoshop for my main ajustments I use curves and curve/masks.

I use a single RAW File for most of my work, for HDR I use between 3 & 7 shots, it depends on the lowest and highest meter readings, the aperture remains consistent, adjusting only the shutter speed.
