I normally use the aperture preferred setting on my camera so I can maximize depth of field, or use the optimum aperture for the lens (normally around the middle of the range) if great depth isn't needed. I often use a tripod (almost always have one in the car when I bring a camera [most of the time] and I often hike with one too). I also use graduated neutral density filters to adjust for typical NW overexposed exposed skies. Of course I spend a good amount of time optimizing each picture in Photoshop using a variety of tools and techniques learned from classes, books, web sites, and practice.

This picture was taken on a tripod. It was early in the morning, so the light wasn't strong. I used an 18mm zoom setting on my Canon Digital Rebel XT (same as 28mm on 35mm film) and a pretty large f-stop to get the close sand and the distant clouds in focus. I hand held a GND filter in front of the lens to hold back the sky a bit.
