An RAF Eurofighter Typhoon FGR4 creates fluff after compressing air laden with moisture on a sudden change of direction.Modern fly-by-wire fighters are are very powerful and extremely agile,these clouds of moisture are almost invisible to the naked eye.To take shots like this one you must study the fighters routine (they always fly the same routine at airshows),youtube has plenty of videos to watch.A camera that shoots 5fps or more and a very long lens (sigma 150-500 is the best lens for airshows) and a lot of practice.
