When you have surf to enjoy, 25-27C air temperature is ideal weather to maximise the enjoyment, Karel. But if you prefer the water to be a bit brisker chose the beaches south of Sydney where the warm current has left the coast and the deeper cold water flows in around the beaches!
Or else, head to Büsum and shelter in a wicker chair from the winds off the North Sea, and admire the cold North Sea from a distance.
