The stones apparently are 'dressed' with a pointy stone hammer but split at right angles quite smartly - further over the moors they can be less regular when the stone becomes more limestone and harder to shape squarely.

The pic here is of a 'stile' linking 2 ancient footpaths across the pennines. It is blocked by wooden slats to climb over when sheep are in the field.
