The pic you commented on was a combo HDR / Panorma.
look in your cams options and see if it has auto bracketing... it will take 3 snaps with different white balance... then you use a tool to combined them in to one pic. in the process of combining the 3 snaps you can adjust the saturation of colors and white and black points... many of my images are right out of the cam but some are HDR pics. you can look it up for better explanation.

Your pictures are beautiful. How do you get your colors to pop that like? Do you need special software or a camera?
