Thank you for the link and the interesting information, Marion. It seems that crawfish grow almost everywhere. Meryl saw some in a local store that are imported from China. Most people in Louisiana refuse to eat crawfish from China in favor of supporting local suppliers. Annual crawfish production in Louisiana is estimated at over 100 million pounds. The crawfish boil is a tradition in south Louisiana dating back to the 1800s. It's about more than just eating. It can serve as a social gathering which can last for hours and may involve hundreds of partiers, music (Zydeco usually) and thousands of pounds of crawfish.
