A lot depends on how they are boiled, Amelia. In La. we usually boil shrimp in salt water only. But crawfish are highly seasoned with onions and lots of pepper. In fact you usually cannot stand to breathe in the steam from the boiler. We boil our crabs the same way. If you have a minor cut on your hand, peeling crawfish or crabs is an ordeal. Worth it, but an ordeal.

I think this is my favorite also, Dear Amelia. I took a lesson from Dear Suzi in Oregon that less is more. Normally I would have shot the whole gate and been on my way.
